First Harvest

First harvest from the Demonstration Gardens

The first harvest is shown from the demonstration gardens at the MPRC (Mission Point Resource Center) in Catacamas, Olancho, Honduras. This harvest of yard-long beans (vigna sesquipedalis) being held by Dwight Tomkins came from just a small plot on the grounds of the MPRC. About that much is harvested every day.

While corn and dry beans are plentiful in the state of Olancho, the agricultural 'bread-basket' of Honduras, vegetables are scarce and not often eaten. This leads to vitamin deficiencies, especially among the young. One of our goals is to show, not only how easy and productive a vegetable garden can be, but how good the food can taste. The foods from the garden will be high-lighted in our class lunches. We like these green beans best in stir-fry and in soups.

In a serving size of 100 grams of yardlong beans there are 47 calories, 0 grams of total fat, 0 mg cholesterol, 4 mg sodium (0% daily value), 8 grams of total carbohydrates (2% daily value), and 3 grams of protein (5% daily value). P.S. No Dwight is not really that tall. Yard long beans are only about 18 inches long, not a yard.
