First Harvest
The first harvest is shown from the demonstration gardens at the MPRC (Mission Point Resource Center) in Catacamas, Olancho, Honduras. This harvest of yard-long beans (vigna sesquipedalis) being held by Dwight Tomkins came from just a small plot on the grounds of the MPRC. About that much is harvested every day. While corn and dry beans are plentiful in the state of Olancho, the agricultural 'bread-basket' of Honduras, vegetables are scarce and not often eaten. This leads to vitamin deficiencies, especially among the young. One of our goals is to show, not only how easy and productive a vegetable garden can be, but how good the food can taste. The foods from the garden will be high-lighted in our class lunches. We like these green beans best in stir-fry and in soups. In a serving size of 100 grams of yardlong beans there are 47 calories, 0 grams of total fat, 0 mg cholesterol, 4 mg sodium (0% daily value), 8 grams of total carbohydrates (2% daily value), and 3 grams of protein (5% daily value).
